Ο αείμνηστος Γιώργος Ελευθεριάδης γεννήθηκε στην Αψαλο του νομού Πέλλης το 1943. Αποφοίτησε από το Γυμνάσιο Αρρένων της Εδεσσας το 1961. Τον ίδιο χρόνο γράφτηκε στο Φυσιογνωστικό Τμήμα της Φυσικομαθηματικής Σχολής του Αριστοτελείου Πανεπιστημίου Θεσσαλονίκης. Το 1966 πήρε το πτυχίο του με το βαθμό «λίαν καλώς».

Από τον Απρίλιο του 1966 ως τον Απρίλιο του 1968 υπηρέτησε στον Ελληνικό στρατό. Από τον Οκτώβριο του 1968 ως τον Σεπτέμβριο του 1970 εργάστηκε ως Kαθηγητής στη Μέση Εκπαίδευση.  

Το 1970 διορίστηκε ως Βοηθός στο Εργαστήριο Ορυκτολογίας-Πετρολογίας της Φυσικομαθηματικής Σχολής του ΑΠΘ. Το 1977 υπέβαλε στην ίδια Σχολή τη διδακτορική του διατριβή με θέμα «Συμβολή εις την μελέτην των ηφαιστειογενών πετρωμάτων της Νοτίου Αλμωπίας» και αναγορεύτηκε διδάκτορας της Σχολής με το βαθμό «άριστα».

Το 1978 μετατάχτηκε σε θέση Επιμελητή στο Εργαστήριο Ορυκτολογίας-Πετρολογίας και το 1979 μονιμοποιήθηκε σε θέση Επιμελητή στο ίδιο Εργαστήριο. Το 1982 μετατάχτηκε στη βαθμίδα του Λέκτορα, το 1984 εκλέχτηκε στη βαθμίδα του Επίκουρου Καθηγητή, το 1989 στη βαθμίδα του Αναπληρωτή Καθηγητή και το 1999 στη βαθμίδα του Τακτικού Καθηγητή.

Κατά το διάστημα 1991-1993 διετέλεσε Διευθυντής του Τομέα Ορυκτολογίας-Πετρολογίας-Κοιτασματολογίας και Διευθυντής του Εργαστηρίου Ορυκτολογίας-Πετρολογίας του παραπάνω Τομέα από το 1991.

Με τον αείμνηστο καθηγητή του Κωνσταντίνο Σολδάτο και τον στενό του φίλο και συνεργάτη Γιώργο Χριστοφίδη.

Το 1980 πήγε με εκπαιδευτική άδεια στο Εργαστήριο Ορυκτολογίας-Πετρογραφίας του Πανεπιστημίου της Χαϊδελβέργης, όπου έμεινε ως το τέλος του 1982. Κατά την παραμονή του στο εκεί Πανεπιστήμιο παρακολούθησε μαθήματα και σεμινάρια και ασχολήθηκε με τη μελέτη των ηφαιστειακών πετρωμάτων της Αλμωπίας και Ροδόπης. Παράλληλα συνεργάστηκε με τον Καθηγητή Lippolt, Διευθυντή του Εργαστηρίου Γεωχρονολογίας του εκεί Πανεπιστημίου, για τη γεωχρονολόγηση ηφαιστειακών πετρωμάτων της Ροδόπης και τη γεωχημεία ισοτόπων ηφαιστιτών της Ροδόπης και Αλμωπίας.

Κατά το διάστημα 1986-1987 επισκέφθηκε το Τμήμα Γεωλογίας του Manchester της Αγγλίας, όπου ασχολήθηκε με την ανάλυση ορυκτών και πετρωμάτων και παρακολούθησε σειρά σεμιναρίων και διαλέξεων. Κατά το διάστημα 1996-1997 βρισκόταν με εκπαιδευτική άδεια στο Ινστιτούτο Ορυκτολογίας και Γεωχημείας της Κολωνίας όπου ασχολήθηκε με την απόκτηση αναλυτικών δεδομένων για τα γρανιτοειδή του Παγγαίου. Επισκέφθηκε επίσης το 1998 το Πανεπιστήμιο της Βιέννης για απόκτηση ισοτοπικών και γεωχρονολογικών δεδομένων για τα γρανιτοειδή και μεταμορφωμένα του Παγγαίου συνεργασθείς με τους Καθηγητές Πετρακάκη και Frank.

Από το 1984 έως το 1988 επισκέπτετο κάθε χρόνο το Γεωλογικό Τμήμα του Πανεπιστημίου της Σόφιας στα πλαίσια του προγράμματος συνεργασίας μεταξύ των Πανεπιστημίων Θεσσαλονίκης και Σόφιας.

Εκτός από την παραπάνω συνεργασία ο κ. Ελευθεριάδης συνεργάστηκε και εξακολουθεί να συνεργάζεται επί τη βάση ερευνητικών προγραμμάτων με επιστήμονες άλλων Πανεπιστημίων (Αθήνα, Μanchester, Βιέννη, Μπολώνια, Πίζα, Φλωρεντία, Περούτζια, Coimbra).

Σε εκπαιδευτική εκδρομή στη Σαντορίνη δείχνοντας στους φοιτητές μία ηφαιστειακή βολίδα.

Ελαβε μέρος σε επιστημονικά συνέδρια, ελληνικά και διεθνή, στα περισσότερα με ανακοινώσεις, ήταν δε μέλος της Ελληνικής Γεωλογικής Εταιρείας, της Γερμανικής Ορυκτολογικής Εταιρείας και του Γεωτεχνικού Επιμελητηρίου της Ελλάδος.

Συμμετείχε σε ερευνητικά προγράμματα είτε ως επιστημονικός υπεύθυνος είτε ως συνεργάτης.

Το επιστημονικό του έργο αφορούσε κυρίως σε τομείς της Ορυκτολογίας και Πετρολογίας με ιδιαίτερο προσανατολισμό στα μαγματικά πετρώματα της Βόρειας Ελλάδας.

Το εκπαιδευτικό του έργο περιελάμβανε τη διδασκαλία της Πετρολογίας Πυριγενών Πετρωμάτων και του Μαγματισμού του Ελληνικού χώρου στο Τμήμα Γεωλογίας του Α.Π.Θ.

Μετά τη συνταξιοδότησή του το 2008 εκλέχτηκε Ομότιμος Καθηγητής. 

Ήταν παντρεμένος με την αγαπητή του σύζυγο Σούλα και είχε έναν γιο τον Λευτέρη.
